1) I like the flash, but: a) the second line of text fades in too soon after the first line, and b) the logo takes a tad bit too long to fade in.
2) You really need a logo on the sub-pages. Maybe make the one in the flash animation a little smaller.
3) The blue bar going right down the left side doesn't look too good. Something needs to be added or re-designed. I don't know
4) The mouseovers are a cleaver idea. I like the horse, but I don't know if I do for every picture. Hmmm...

I think you should make those language buttons a little more prominent. I didn't know right away where to click because that yellow is really fading into the background. The logo on the front page is really nice - I think that should be incorporated into the other pages.
The sidebar menu just doesn't seem to be working. I think if you're going to use a sidebar, you should either use a body background for the coloured bar, or set your page margins to 0. That space around there isn't good. Those horses in the background should be reworked as well - they have different colours and interesting effects, which stands out too much behind the plain menu text. The mouseovers also need to be reworked - they should expand across the blue bar, and I think the text should appear in the middle rather than at the bottom. I don't know bout that gray/brown either.
I would also streamline the titles on that menu. Something like "Holiday Programs" instead of "Holiday Programmes for Unaccompanied Children" AND "Holidays for All Ages" would streamline this a lot (the same could be done with many of the other categories = "Showjumping and Foxhunging" = "Activities" etc.). Menu's often look funny when some headings are much longer or shorter than the others. Also, don't link to external pages from the main menu - that should be kept separate. It's annoying when I don't know where a link is going to send me.
Overall, I think you need to really play this up as a vacation destination. Think about what would attract people (horses, obviously, maybe beatufiul scenery or something like that as well). Then take those ideas and feelings and translate to a visual design. Your design doesn't make me want to go there, but the photos did, so think about that. I would go with a light, airy design using lots of green and/or other natural colours. This design isn't bad, but I think you could do better.
