Thanks for commenting on some other sites. It's a good idea to keep up reviewing if you request actively as that's most beneficial for the whole community.
I don't like the header in the default theme much. The boxes within the boxes don't flow well. The pixel font at large sizes isn't too good either. And the shadows for the bars doesn't go with the general look. It's just not very cohesive. But I think the biggest problem is when I switch themes to blue, there's nothing familiar in the new header... no logo, no branding.
That said, I like the navigation links. Smooth and straightforward. But what about all that white space in the nav box? It looks very desolate. You might be able to reduce that effect by removing the border around the nav column altogether.
Your text seems to lack structure -- that is, it isn't fit for web-reading (skimming). There are no heading, lists or other cues for the eye... and I'm definitely not going to read all of that text to get your message.
If anything else, I'd say the colours are too plain, but you're going with a theme-switcher, so I won't say anything more about it.
On the whole, I've found that the more one sets the site up, the better. If someone posts a title like "just another template site..." it seems like that person is not taking the site seriously, and that people would be perhaps wasting their time to critique it for ways it could be improved.
So, as a demo, what are you hoping to achieve? What areas in particular are you testing? What are you willing to change? What part is the demo?
What are you hoping to achieve through getting a critique?
If you can answer those questions, it may help people give you the feedback you're looking for.
New templates added to your site's style, or new templates added as content on the site? If it's the former, then I don't see how to access them -- still only two themes in the style chooser. If it's the latter, then we're probably not interested as that's only indirectly related to the topic of reveiwing the site's construction.
I can still only access the default and blue styles... if that's what you're referring to.
I see you've simplified the header in the default theme, and it's better now. Still lacking a logo or some kind of consistent symbol, though.

I'm beginning to get distracted by the animated image on the left. What you might be able to do is make that a static image, but link it to another section of your site which has both animated and static versions for the users to choose from.

I'm beginning to get distracted by the animated image on the left. What you might be able to do is make that a static image, but link it to another section of your site which has both animated and static versions for the users to choose from.
It's really taking shape now. Good work.
