There are two ways to protect yourself from junk email:
1) Use a sender verification service - basically every email you receive will get an auto-response saying 'please click this link if you are really a human'. Because most (if not all) spammers send from fake email addresses, they never get the response and so the spam won't get through. Only problem is some people will think your email is spam and ignore it meaning you never get the email and some email services automatically trash these emails because they think they're spam. Usually, once someone has clicked the verify link all future emails will be 'white listed' and automatically arrive.
2) Don't use email

What kind of anti-spam is on your server? I have Spam Assassin on mine and it does a good job at getting most of it. Sender verification services work pretty well also.

My solution is to display my email address as a graphic with no mailto: link. If somebody wants to email me they'll type it in themselves. Otherwise, once your inbox starts getting tons of spam it's really too late. Use a different email address. That brings me to another thing I do. The email address I display on my website as a graphic simply forwards email to my "real" email address. If one day I decide I'm getting to much junk mail that is being sent to that alternate email address I'll just turn it off and choose another.
