Basics of server log stats

I've just got my first site on a host that provides server log downloads - up till now I haven't really looked into the subject much!

I've downloaded the stats - but can any one tell me where I can find out the basics of using them to extract data, etc?

This would probably be something your host should help you with, but if you'd like us to try to help we need to know which statistics program you are using.
