No monitor on Ubuntu Box
For some reason, the screen resolution on my Ubuntu comp is 640 x 480. I do not have a monitor hooked up to it, but in order to see more options when I go to System > Prefs > Screen Res, I have to plug in a monitor. How can I make the screen resolution bigger when I get in via VNC? Or an I stuck with 640 x 480 since I don't have a monitor hooked up to it?

Yeah, I find that as well, when I have my monitor turned off when I boot up ubuntu, it just defaults to 640x480. A similar thing is probably happening to you. Try booting up with a monitor first so that you can actually get a decent resolution, then unplug it once it's booted up.

Your available list of modes is in your /etc/X11/xorg.conf file. Change the list of modes to show only the one you want to use.

If you run sudo dpkg-reconfigure -phigh xserver-xorg a little setup thing will pop up (using telnet for this) and just uncheck all the low resolutions (using the space bar). Then restart and you're good, no need to hook up a monitor to have a decent resolution.
