http and mail hosted separately?
It may seem obvious to some of you but I really don't know wheter it is possible to have a website hosted by profesionnals and a mail server hosted in our company.
If not, Why?

Actually, it is very possible and a lot of people do it. The change needs to be made on the DNS side of things... You would just modify the mail exchange (MX) record to reflect the server that would be handling the mail.
One example that a lot of hosts deal with constantly is Everyone.net or Bigmailbox.com. Both of these services provide users a way to offer free e-mail @theirdomain.com. When a user wants to use this service, their e-mail obviously has to be handled by a seperate server so the host just has to modify their MX records to reflect the appropriate mail servers...
